I love my Mom's cooking and I miss it dearly now that she isn't right around the corner. This is probably good because when my Mom learned to cook there wasn't a whole lot of heart healthy ads on TV. There really wasn't any public education about diet that I can remenber until maybe highschool? Any way this recipe is from her book. No, she isn't published. she made a book for me for Christmas one year and I lost it in Katrina. So she made me a scaled down version in '06. |

1/4 Cup of butter, (I didn't use that much and used smart choice.) Cook noodles. Heat oil and butter in large deep skillet. add chicken (precooked) or shrimp raw (they cook quick and you will saute), onions, garlic, mushrooms satue all until onions are clear (for white) or until chicken is golden or shrimp is opaque, about 6 minutes. Stir in cream, salt, pepper, garlic powder (small sprinkle) and bring to a boil. The fettuccine noodles should be done. Reduce heat after boiling the cream and simmer for about 3-5 minutes. Add basil and parmesean. Stir. add noodles. I add some mozzarella shredded cause I love cheese, but you don't have to. Allow to cool before serving. Makes about 5 big boy servings. I say this cause Don ate three bowls and I gave some to my fave post woman and I ate a bowl. |
